As a certified nutritional counselor, Dr. Judith Valentine has worked with hundreds of clients one-on-one on issues of weight loss and nutrition. But when she decided she could reach more people by paring down individual consultations and concentrating on educating large groups, she didn’t want to leave individuals high and dry. “It seems so inefficient for someone to spend an hour or two with me week after week,” she says. “It gets expensive, and it takes a lot of time. Writing a book was the closest thing to a mind meld I could come up with.”
